Tubers can be eaten like potatoes or dried and ground into flour. Young seed is sweet, resembling sweet corn, and it is likely this sweetness that gives this plant the common name of water-chinquapin.
A truly aquatic plant, American lotus requires at least 1 to 6 ft of water, with 3 feet of water depth considered ideal. In ideal conditions American lotus can spread rapidly.
