In practical terms American lotus is an aquatic plant that boasts a high degree of edibility. All parts are edible, but often attention is given to the tubers and seeds. Tubers can be eaten like potatoes or dried and ground into flour. Young seed is sweet, resembling sweet corn, and it is likely this sweetness that gives this plant the common name of water-chinquapin.

A truly aquatic plant, American lotus requires at least 1 to 6 ft of water, with 3 feet of water depth considered ideal. In ideal conditions American lotus can spread rapidly.
